Preparation and cooking time: 60 minutes
1Kg. of goat kid (you could also use lamb), 30g. of butter, 1 spoonful of oil, 1 glass of stock, a glass of white wine, 6 little onions, 12 little carrots, 1 potato, 1 branch of thyme, 1 spoonful of flour, ½ a spoonful of vinegar, salt and pepper.
Brown the pieces of meat in the butter and oil. Dust with the flour, cook till golden brown, add the stock and the white wine, salt, pepper, and add the fresh thyme, the quartered onions and the carrots. Leave to cook 20 minutes and then add the potato.
Cook again for 20 min.
Serve, adding a dash of vinegar to the sauce.
